I made these for my uncle John for his birthday. He loves lemon. I think he’s the only one in the family who does, but that’s okay!
Makes about 3 cups
Ingredients
Your favourite lemon cake mix (I used Betty Crocker)
Lemon Buttercream
1/2 cup solid vegetable shortening
1/2 cup butter, softened
2 tbsp lemon juice
1 tsp lemon zesst
4 cups confectioner’s sugar, sifted
Additional lemon juice or milk (optional)
Directions
Prepare cake mix as directed on the box
Let cool and then begin the icing process

In large bowl, cream shortening and butter with electric mixer until light and fluffy. Add lemon juice and zest; beat well. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, if icing is dry, add additional juice or milk and beat at medium speed until light and fluffy.
Keep icing covered with a damp cloth until ready to use. For best results, keep icing bowl in refrigerator when not in use. Re-whip before using.
I also made the same kind of cupcakes with buttercream frosting without all the lemon added to it. I also added a cute Sweedish Berry on top of each cupcake to add a splash of colour and make them bright and fun!
